Kuih Rengas/Mung Beans Fritters

 

 Love this authentic snack. Crunchy outside and soft inside.


Ingredients:
1 cup green beans
1/2 - 3/4 cup soft brown sugar or regular sugar (adjust sweetnes)
1/2 teaspoon salt
6 tablespoons of grated young coconut
3 tablespoons flour


To Make dough:
 1 cup rice flour
1 tablespoon cornstarch
1/2 teaspoon turmeric powder
Salt
Enough water

To make the batter, bring together all the dry ingredients in a bowl. Add water little by little to produce a batter that is not too thick or thin.



Method:

Wash the green beans and boil it with enough water until tender.

When almost dry, then add the sugar, coconut, flour and salt. Stir well and leave to cool.

Form mixture into small balls. Press dough flat. Keep aside.

Heat oil in a wok. Once oil is hot, dip the balls into batter. Deep fry till golden brown.

Remove from wok. Drain well on a paper towel and serve when cool.
