Chocolate Chips

This is our family's favourite Chocolate Chips recipe and is the best one we've been baking for years.....
150g plain flour
110g unsalted butter
50g caster sugar
60g soft brown sugar
1 tsp vanilla extract
1 egg, beaten
½ tsp baking powder
½ tsp salt
150g  semi-sweet chocolate chips
150g chopped walnuts (optional)

Heat the oven to 160°C (320°F) gas mark 4. Sieve the flour with the baking powder and salt.

Cream together the butter, caster and brown sugars and vanilla until light and fluffy. Beat in the egg.  Fold in the mixed flour into the creamed mixture, followed by the chocolate and walnuts. Cover and chill for an hour.

Using a teaspoon, scoop up a little of the dough. Use a second teaspoon to transfer the dough to greased baking sheets on a baking tray, spaced about 5cm apart. Top with more chips if you like and bake for about 10-12 minutes.

Cool on a wire rack before storing in an airtight container.
