Curry Puffs Stuffed With Potato



Another all time favourite snack from Malaysia. Its delicious and easy to make too......

For pastry:
Plain flour- 2 cups
Corn flour-1 tbsp
Butter- 2 tbsp
Oil - 2 tbsp
Water as required
Salt as taste

Method:
To make pastry, mix flour with butter, oil, water, salt and knead well. Let it rest for 1/2 hour.


Ingredients for Curry Puff Filling:

3 potatos (boiled and finely cubed)
5 tablespoons oil
1 medium red onion (finely chopped)
2 teaspoons meat curry powder
1 teaspoon chili powder
1/2 teaspoon turmeric powder
1/2 cup of finely diced chicken meat
1 1/2 teaspoon sugar
1/2 teaspoon black pepper
1/2 teaspoon salt

Method:
1. Heat oil and fry onion gently until golden brown. Add the curry powder, chili, turmeric and fry gently. Add the chicken, potatoes, sugar, pepper, salt and cook for 5 minutes. Mix well and leave aside to cool.

2. Roll out the pastry and cut out 10cm/4in rounds of. Place one tablespoon of the potato mixture in the middle. Fold the pastry over to form a half circle, pressing the edges together with your fingertips or crimping with a fork.

3. Fry in hot oil until golden brown or cooked.
