Basic Butter Cake
This simple mouthwatering yellow butter cake is just too easy to prepare.
250gm butter
230 gm castor sugar
3 eggs
3 eggs yolks
250 self-raising flour
1/2 tsp salt
1/2 tsp baking powder
2 tsp vanilla essence
6 tbsp UHT milk
Method:
Grease and line a 20cm round cake tin with parchment paper. Preheat oven to 180°C.
In a mixer, beat butter and sugar till white and fluffy. Add in eggs and eggs yolks one at a time and mix well. Then add is vanilla essence and milk and mix well. Fold in sifted flour, salt and baking powder and mix well.
Check the consistency of the batter. It should be of dropping consistency. If it stands peaking and hard, add more milk. Pour into baking tin and bake for about 50 mins or or until cooked through when tested with a skewer.
