Pandan Coconut Cake
Here is a new twist on the refreshing combination of Pandan extract and coconut cream.......
Ingredients:
1 1/2 cups all purpose flour
1/2 cup sugar
2 tbsp butter
1/2 cup water
1.5 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 tsp pandan extract
1/2 tsp green color
1 egg
2 tbsp cooking oil
4 tbsp coconut cream
Method:
Preheat oven at 180°C.
In a bowl, lightly beat the eggs, add water, coconut cream, oil, pandan extract, salt, sugar, baking powder & baking soda and mix well.
Sieve the flour, and slowly pour into the mixture, mix well, and set aside.
Pour the mixture into the prepared bread or cake tin. Bake for 20 to 25 minutes or until a light brown crust appears on the top, or until cake tester comes out clean.
