Chicken Varuval

1/2 kg chicken - cut into small bite size pieces
1 pc cinnamon stick
2 cardamons
2 pcs of star anise
few pcs of dried chillies
few curry leaves
1/4 cup of yoghurt
Sugar, salt and pepper to taste
1 tbsp turmeric
2 tbsp chilli powder
1 big onion - chopped

To Grind:
2 medium size onions
5 cloves of garlic
2" of ginger

Wash and cut the chicken into small bite size pieces.

Heat the wok and add some oil/ghee. Add the cinnamon stick, cardamons, star anise, dried chillies, onions and curry leaves, Then add the garlic/ginger paste and saute for few mins.

Add the chicken pcs, salt, turmeric and stir well. Cover and cook for few mins until the chicken turns tender.(during this time you will notice chicken oozing out water and later the oil.)

Then add the chilli powder, pepper, sugar, yogurt and keep stirring the chicken until it turns dark brown  on slow fire. Remember not to burn it.

Once all water has been dried, remove from heat and garnish with fried cashew nuts and fried curry leaves. Add 1 tsp lime juice if you want.
